Coffee Harvest 2021

Every year all the coffee estates throughout Panama and the world come to harvest time.

Some coffee estate starts to harvest from December and always extend until the first months of the new year.

Normally that’s the way the crops are, but every year is different, the climate changes, every moment; and this can delay or advance the harvest a little.

It is a very spectacular phase because every year new things come, new experiments, better coffees to improve in all its aspects.

To be harvested, the coffee cherry must be at its optimum point, of ripeness and that it almost comes off with the touch of your fingers; All this greatly influences the taste of the coffee.

When harvesting the ripe coffee cherry, it is developed with its charms and all its magic of sugars; that accompanied by the processes are transmuted into flavors, aromas with many passions.

The coffee process is a hard work and full of love, it is where great things are achieved with the coffee cherry at its ripe point, exalting its extraordinary flavors.

This is a topic that is interesting to talk more about, today there is a lot of innovation in the drying phase and where the coffee processes are made, and the coffee estate are increasingly at the forefront.

The pandemic is not over yet, but coffee growers are working hard to bring us all their best coffees.

This 2021 is a promising year, because better things are coming and the coffee harvest will be something unique, since they will captivate us with their aromas, flavors, textures and much more in each year and in each harvest.
