From Green Coffee to Your Cup: How We Work at Café & Aroma Roasters

Behind every cup of coffee is a journey that begins long before roasting. At Café & Aroma, we work with Panamanian coffees from different farms and regions, carefully selected according to their origin, variety, processing method, and quality.

Before roasting, we evaluate characteristics such as the green coffee’s moisture, density, and physical condition. We then conduct test roasts and cupping sessions to identify each coffee’s aroma, sweetness, acidity, body, and balance.

Based on these results, we develop a roasting profile designed to highlight the natural qualities of each lot. Since every coffee reacts differently to heat, we carefully adjust the time, temperature, and overall roast development.

At Café & Aroma Roasters, we roast in small batches to maintain greater control, consistency, and freshness. After roasting, we cup the coffee again to confirm that the final result matches the profile we want to offer.

From the selection of the green beans to the final preparation, every stage reflects our commitment to quality, the work of our producers, and the diversity of Panamanian specialty coffee.
